neighbor gifts & lemon crinkle cookies

I found a recipe that I not only pinned but that is now written down in my "favorites" recipe book. You know when you find a recipe that you are already planning to use again? I found that type of recipe at Kitchen Meets Girl. Check out Ashley's amazing cookies...

I set aside tonight as a baking night so that I could give a little Christmas gift to my neighbors tomorrow. I made Ashley's yummy cookies & I also made my favorite chocolate chip cookies (Fresh & Easy's recipe).

To make the lemon cookies you need only 4 ingredients!
Lemon Cake Mix
8oz tub Cool Whip
1 egg (slightly whipped)
Powdered Sugar

Mix the first three ingredients together (I used my stand-up mixer). The batter will be very sticky! It is like whipped marshmallow cream...

Roll a spoonful of the batter in powdered sugar and drop onto a baking sheet. I found it easier if I sprinkled powdered sugar on my hands and rolled the cookies in the palm of my hand & then rolled them in a bowl of powdered sugar...

Bake for 10 min at 350 degrees. Let them rest on the baking sheet 1 min then move to a wire rack to cool completely. Look at how pretty...

Voila! Ta-da! Check these babies out!... 

After all the cookies cooled I packaged them up...

I found some awesome gospel tracts that were also scratchers...

I slipped the tracts behind the label on the container of cookies...

And here you go! Easy and yummy neighbor gifts!

  2. I'm glad to know the crinkle cookies are good. I saw the Pin but wasn't sure how cool whip would bake. My hubby loves lemon and I will plan to make these for him. :) Love the neighbor gift.
