cornbread pancakes

I have been on a waffle and pancake kick lately.
Not the packaged ready mix stuff - yuck!
I've been using real ingredients and I've enjoyed delicious results!!
This morning, after a lllooooonnnggg night with my kids not sleeping, I decided to make pancakes - from scratch - because that is what helps me to be happy and start the day well. It gets me into the Mom mode - the homemaker mode - the servant of all mode - and it makes me happy that something that I create from scratch makes our bellies full and satisfied. 

I'd like to share the recipe with you too!
It is a new favorite of mine!


1-1/4 cups flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1-1/3 cups milk
1/4 cup coconut oil
1 egg

Mix all ingredients. For each pancake, pour 1/3 cup batter on griddle. Cook about 2-3 min on each side. Serve with butter and syrup. YUM!

I hope you enjoy these as much as I did! They sure helped brighten my morning and start my day off right!
