Simple Summertime Pasta

I love summer, simply because tomatoes are in season! 
Oh how I love ANYTHING with tomatoes!

Last summer I tried Ina Garten's Summer Garden Pasta recipe, 
and I was in love!
This is the easiest & yummiest Summertime Pasta EVER!

I have adapted Ina's recipe a bit (I know, she's a genius recipe maker, but my kids don't like the basil flavor so I add the basil in the end when I plate my pasta. Also, I use whole wheat rotini pasta noodles, again for my kids.)


What you'll need!!!!...
4 cups cherry tomatoes (mine were from my Mother in Law's garden!)
1/2 cup Olive oil
2 tsp Kosher Salt
3 Cloves Garlic, minced
2 tsp Crushed Red Pepper
1 tsp Black Pepper
Basil leaves (for garnish)
Parmesan (for garnish)

Halve the cherry tomatoes...

Pour in the olive oil & add all the remaining ingredients
(except the basil & parmesan)...

Stir to coat the tomatoes (I got help from my BIG helper Owen)...

Cover in saran wrap and let it sit on your counter for 4 hours...

When you are ready to serve the pasta, just toss the hot cooked noodles into this pasta sauce and garnish with basil & fresh parmesan. 

This is BY FAR the best, easiest, freshest tasting 
summer pasta recipe I have ever had.
