Don't you just love it when you are craving something and you go into the kitchen and find ALL the ingredients necessary to make said craving!?!?!
My husband and I are always experimenting with new recipes at night, when the kids are sleeping. It's the best time to bake in my opinion :)
Tonight I wanted something with oatmeal and brown sugar.
So I thought about it...
do I want oatmeal cookies,
or oatmeal muffins.
How about an Oatmeal Cookie Muffin!!!
But does such a thing exist?
Um, YES! Yes it does!
Jessica from How Sweet It Is had thought of it already
and created a great recipe!
Thank you Jessica!!!

Oatmeal Cookie Muffin recipe.
I am a cinnamon fanatic!
I usually double the amount of cinnamon that a recipe specifies.
So, for this recipe, I used 1 tsp of cinnamon
instead of the 1/2 tsp that it suggested.
That's just me though - I like it VERY cinnamony :)
Also, I did not use chocolate chips.
Confession, I don't like chocolate.
I know, I know...
my friends question me on this all the time...
I just prefer non-chocolate desserts and goodies! :)
Here is what my muffins turned out looking like
(forgive the bad lighting and lack of presentation)...
So, if you are reading this,
and your kids are asleep,
and you have all the ingredients on hand,
I recommend you make these yummy muffins.
You'll be so glad you did!
Thank you Jessica for the awesome recipe :)
